Our Story
Olivia’s Ristorante was created from a love story of family,
tradition, and a lifelong devotion to authentic Italian cuisine.
With over 30 years of experience Chef Federico Polsinelli,
originally from just outside of Naples, Italy, brings the heart and
soul of his homeland to every dish. Raised in a culture where food
was the center of family life, Federico learned to cook through
recipes passed down for more than 75 years, preserving the
flavours, techniques and passions of generations before him.
Together with his wife Cass, Federico has opened 7 successful
restaurants, each one a step in a journey defined by
craftsmanship, professionalism, and genuine hospitality. Olivia’s
Ristorante is named after their beautiful daughter, Olivia, who’s
name represents everything the restaurant stands for- family,
warmth, and love. She is the inspiration behind the restaurants
heart and spirit.
After decades in the industry, Federico and Cass were drawn to a
quiet beauty and close-knit charm of Shallow Lake, Ontario. It
was here that they chose to create something truly special: a
place where authentic Italian flavours, cuisine, and flair could be
shared in an atmosphere of elegance and sincerity, and a place
they could proudly call home.
More than simply a place to dine, Olivia’s Ristorante is an
experience refined yet welcoming, romantic yet familiar. It’s where
traditional meets innovation, passion meets professionalism, and
every guest is welcomed as family.
